Why we love Cranberry White Chocolate Artisan Bread Recipe

Some how the holidays sneak up on me EVERY year! OMG. How does time fly so quickly? It seems that they were just here a few days ago and now they’re here again.

Don’t get me wrong, I’m a lover of the holiday season… I’m just not ever quite sure where the 11 months between them goes!

Anyways, now that I’m off of my soap box, have turned on my holiday pandora station, and I’m fully embracing the holiday season and all the jolly-ness that comes with them, let’s talk about this very festive loaf. 🙂

Ingredients in our Cranberry White Chocolate Artisan Bread Recipe

I love that this recipe has only a few simple ingredients and an overnight raise on the counter. It doesn’t even require you to knead it! Now, that’s pretty awesome in the bread making world! This crusty loaf will be as loved in your family as it is in ours– we all adore it.

  • Flours- We are using two kinds of flour: white whole wheat flour and unbleached flour. By combining the two we’re getting the nutrients of whole grains with a lighter crumb and less density in the finished loaf. White whole wheat flour is milled from the hard white wheat berry. It contains the entire wheat berry; the difference is in the white berry’s bran, and the result is a lighter colored, sweeter tasting flour. Retaining the bran and germ yields a flour with more fiber and naturally occurring nutrients. Unbleached flour has been aged naturally after being milled. It has an off-white color, which continues to dull as it ages, and a more dense grain than bleached flour.
  • Leavener– This loaf only requires a very small amount of yeast to get it going, the yeast will activate and work it’s magic perfectly as it sits overnight on the counter.
  • Liquid- The liquid is hot water, be sure the water is hot out of the kitchen faucet when it’s added. The reason is we want it to raise the temperature of the flour and yeast and get it started in the raising process. I use my hand to quickly mix this loaf and it does not burn me because the hot water is quickly absorbed into the flour.
  • Mix-ins- Now we are adding the festive ingredients– Dried Cranberries and White Chocolate Chips. It’s delightful! You’ve probably seen these flavors in loaves at the bakeries around this time of year. It’s wonderful served on the side of your favorite Country French Omelette, or try it as done up as french toast, too!

How to make Cranberry White Chocolate Artisan Bread Recipe

All you do is mix 4 ingredients together, cover it with plastic wrap, and let it sit on the counter overnight! Easy-peazy. It has a moist crumb with a crusty outside… my mouth is watering right now thinking about! You’ll adore it too. 🙂

  • Mix the dry ingredients in a large bowl, stirring by hand, add water and mix until moistened, cover entire bowl with saran wrap that has been generously coated with cooking spray.
  • Let sit for at least 12 hours.
  • Turn out dough onto a floured surface, add dried cranberries and white chocolate chips, gently knead to incorporate, pull sides in, and flip the loaf over.
  • Cover again with the same saran and let raise for 45 min or until double in size.
  • Heat the oven to 450 degrees F with ceramic dutch oven and lid in the oven.
  • Carefully place dough in dutch oven, replace lid, and cook for 25-27 minutes or until golden brown.
  • Cool on a wire rack.

I am finding that the words I use to describe the day, the week, the month, life often include chaotic and crazy. That has become my mindset, my norm, which really isn’t the way I want to live. With the mindset of needing to slow down a minute we are talking meditation on this beautiful Fit Friday. I am a morning meditator, when I am mediating. It not only allows for me to start the day calmly, it also gives me a reference point to my day when the crazies start to take over.

So the challenge for Fit Friday this week is to take a few minutes any time that works for you to find your calm. your center, and allow yourself to enjoy the moments.

  • 1 1/2 cups white whole wheat flour
  • 1 1/2 cups unbleached flour
  • 1¼ teaspoons sea salt
  • 1/2 teaspoons instant dry yeast
  • 1½ cups hot water
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
